What the trip looks like
Istanbul alone justifies the trip, Hagia Sophia, the Blue Mosque, the Basilica Cistern, the Grand Bazaar and a Bosphorus ferry.
Cappadocia is the second half: cave hotels at Göreme, the underground cities, and the balloons at first light if the wind allows them up.
Pamukkale's white terraces and the ruins at Ephesus round out a longer itinerary, usually with an internal flight to save the drive.
